Lemony Herbed White Bean and Rice Soup - Ontario Bean Growers

Ingredients

• 1/4 cup olive oil
• 1 onion, finely diced
• 1 carrot, finely diced
• 8 cloves garlic, minced
• 1 1/2 tsp salt
• 1 1/2 tsp thyme
• 1/2 tsp red pepper flakes
• 1/4 tsp turmeric
• 1 can white kidney beans, drained and rinsed
• 1/2 lb of potatoes, peeled and diced
• 4 cups chicken broth
• 4 cups water
• Juice of 1 lemon, divided
• 2 cups packed kale, chopped
• 1/4 cup fresh dill, chopped
• 1/2 cup rice, cooked
