• ½ cup unsalted butter
• ½ cup all-purpose flour
• 4 cups sharp cheddar cheese (shredded)
• 1 cup Gruyère cheese (melts well, adds nuttiness)
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon Dijon mustard
