Ingredients

• 1 large onion, finely chopped
• 2 cups celery sticks, finely chopped
• 2-3 tbsp olive oil
• 3 garlic cloves, mashed
• 1 cup baby potatoes, peeled and finely chopped
• 6 cups water or vegetable broth
• ¼ tsp black pepper
• ¾ tsp salt
• 4 cups asparagus, finely chopped
• ½ cup of fresh basil, finely chopped
• ½ cup of fresh parsley leaves, finely chopped
• ⅓ cup of cashews
