- 1/2 cup butter
- 1/2 cup minced onion
- 4 cloves mince garlic
- 1-3 chipotle peppers in adobo sauce - finely minced
- 6 tablespoons flour
- 3 cups whole milk
- 2 cups sharp cheddar cheese
- 1 cup Monterey jack cheese
- 1 drained can corn (optional but so good in the mac and cheese)
