Ingredients

• 375 gram penne pasta
• 2 tablespoon olive oil
• 1 onion, finely chopped
• 1 baby fennel bulb, finely chopped
• 1 carrot, finely chopped
• 500 gram italian sausages
• 1/2 cup white wine
• 1 400 gram can cherry tomatoes
• 1/3 cup cream
• 1/2 cup parmesan, grated, plus extra to serve
