Carrot Cake Surprise

Ingredients

• 1 1/4 c sugar
• 3/4 c vegetable oil
• 3 eggs
• 1 tsp vanilla
• 2 c flour
• 1 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
• 1 tsp cinnamon
• 1/4 tsp nutmeg
• almost 2 cups shredded carrots
• 1 c chopped walnuts
• 1 c chocolate chips - optional
• 1 c crushed pineapple - undrained
• 1 8 oz softened, cream cheese (frosting)
• 1/4 c softened, butter (frosting)
• 2 tbsp frozen orange juice concentrate, thawed (frosting)
• 2 tbsp lemon juice (frosting)
• 5 - 6 c confectioners' sugar (frosting)
