Tasty Indian Baked Tofu recipe

Ingredients

• 1 large or 2 small/medium block of firm plain tofu, dried and pricked with a fork or with a bamboo stick in multiple places
• 2 courgettes, sliced
• a small handful cherry tomatoes
• a glug olive oil
• a small handful spring onions, sliced
• 1 red chilli, sliced diagonally
• a small scattering fresh parsley
• 1 tsp turmeric powder
• 1/2 tsp garlic powder
• a pinch sea salt
• 1 tsp Kashmiri chilli powder
• 1/2 tsp brown mustard seeds
• 1/2 tsp cumin seeds
• 1 tsp Madras curry powder
• 2 tbsp olive oil
