• Finely grated zest of juice of 3 lemons (to make 240ml juice)
• 1⁄2 cup caster sugar, plus extra 150g
• 1⁄2 cup brown sugar
• 1⁄2 tsp ground nutmeg
• 1 tsp vanilla extract
• 1 free-range egg
• 1 Tbsp poppy seeds
• 3⁄4 tsp bicarbonate of soda Icing sugar mixture, to dust
• 600ml sparkling mineral water
• 2 cups ice cubes and mint sprigs, to serve
