Meatball tray - Lapin Liha

Ingredients

• 500 g potatoes
• 3 carrots
• 3 red onions
• 2 parsnips
• 3 cloves of garlic
• 3 tbsp oil
• 1 tbsp balsamic vinegar
• salt
• black pepper
• 1 pack of Lapin Liha’s red deer meatballs
• Rucola pesto
• ½ dl cashew nuts
• 1 clove of garlic
• 50 g arugula
• 1 dl grated Parmesan cheese
• 1 tsp lemon juice
• 1 dl olive oil
