Ingredients

• 200g butter, softened
• 350g digestive biscuits, crushed
• 75g dark chocolate, melted
• 2 tsp ground ginger
• 1 tsp ground cinnamon
• 1/4 tsp nutmeg
• 1/4 tsp allspice
• 1/4 tsp cloves
• 1 tbsp brandy or rum
• 4 x 300g blocks cream cheese, at room temperature
• 175g caster sugar
• 2 large eggs, lightly beaten
• 1 tsp vanilla extract
• 100ml double cream
• 200g dark chocolate, chopped
