Ingredients

• 1 pound ground turkey
• 2 teaspoons chili powder
• 4 tablespoons fresh lime juice divided
• 1/2 teaspoon salt
• 2 tablespoons olive oil
• 1 red onion vertically sliced thin
• 1 cup frozen corn kernels
• 2 15 ounce cans black beans drained
• 1/4 cup sliced pickled jalapenos drained and chopped
• 9 corn tortillas
• 8 ounces Monterey Jack cheese shredded
• 5 large plum tomatoes thinly sliced
