Ingredients

  • 2 pounds (1 kg) pork belly cut into 1-pound (500 gram) portions
  • 4 tbsps (60 ml) vegetable oil divided
  • 2 cups (500 ml) brewed Thai tea
  • 3 cups (750 ml) water
  • 2 tbsps (30 ml) soy sauce
  • 2 tbsps (30 ml) Fish Sauce
  • 2 tbsps (30 ml) brown sugar
  • 2 tbsps (30 ml) Gourmet Garden™ Minced Garlic Paste
  • 1 tbsp (15 ml) Gourmet Garden™ Ginger Paste
  • 1 piece star anise
  • 1 cinnamon stick
  • 2 tsps (10 ml) peppercorns black
  • 1/2 cup (125 ml) sweetened condensed milk
  • 1/4 cup (60 ml) tahini
  • 4 tsps (20 ml) sambal chile paste
  • 1 tsp (5 ml) Gourmet Garden™ Ginger Paste
  • 2 cups (500 ml) short grain rice cooked
  • 4 tbsps (60 ml) vegetable oil
  • 1 tbsp (15 ml) fresh lime juice
  • 1 tsp (5 ml) sugar
  • 1 tsp (5 ml) Fish Sauce
  • 1/2 tsp (2 ml) Gourmet Garden™ Minced Garlic Paste
  • 1 Thai chile thinly sliced
  • 1 1/2 cups (375 ml) fresh Thai basil coarsely chopped
