Ingredients

• Pastry: 225g (8 oz) organic plain flour
• 125g (4 oz) organic butter
• 80g (2 oz) icing sugar plus a little extra for dusting
• 2 organic egg yolks
• 1 tablespoon iced water
• Lemon Filling: 280 ml (10 fl oz) single organic cream
• 4 tablespoons Roots & Wings Organic Lemon Curd
• 100 ml (4 fl oz) organic lemon juice (approx the juice of 1 1/2 lemons)
