Tuna Mini Quiches Recipe

Ingredients

• 1 (4.5 oz.) Can Solid Light Tuna in Water, drained and broken into pieces
• 2 prepared pie crusts or 36 mini tart shells
• 3 eggs
• 1⁄3 cup heavy cream
• 1⁄3 cup whole milk
• 2 tsp. olive oil
• 2 Tbsp. diced onion
• 1⁄2 cup packed fresh baby spinach
• 1⁄2 cup packed fresh baby arugula
• 2 Tbsp. chopped roasted red peppers
• 1⁄2 cup finely shredded Swiss cheese
• Salt and pepper to taste
