No meat? No problem. I make this salad and its as good of a meal as a salad with meat.
Ingredients

- hard Boiled eggs 2 cubed
- Feta cheese cubed 1/4 cup
- Cucumber 1/4 cup sliced
- Green pepper half
- Cherry tomatoes handfull
- Lettuce hand full
- Beetroot (1 large or 3 small) sliced
- Kiwi 1 sliced
- Avocado 1/2 sliced
- Carrot 1 sliced
- Radish 3-4 cubed
- Dressing
- Balsamic vinegar 1/4 cup
- Extra virgin olive oil 3/4 cup
- Dijon mustard 2 tsp
- Mayonnaise 1 tsp
- Salt a 1/4 tsp
- Black pepper powder 1/4 tsp
