- 1 ½ lbs beets (3 medium beets), peeled and cut into quarters
- 8 garlic cloves, unpeeled
- ¼ cup plus 2 tablespoons extra virgin olive oil
- ¼ cup tahini
- Juice of ½ lemon
- ½ teaspoon kosher salt
- 1 tablespoon zaatar
- 2 tablespoons crumbled feta
- Pita, for serving
