Valentine's day Salad with Endive, Grapefruit and Fennel
This salad with endive, grapefruit, and fennel is a deliciously fresh winter salad with beautiful pink colors that are perfect for Valentine's Day.
Ingredients
- 4 heads of red endive (or radicchio)
- half a fennel bulb
- a handful of radishes
- 2 pink grapefruits
- 4 slices of prosciutto
- 1 teaspoon mustard
- 3 tablespoons honey
- 6 tablespoons good quality olive oil
- 2 tablespoons pumpkin seeds
- salt and pepper to taste
