- 1 courgette (sliced and halved)
- 1 large pepper (sliced)
- Pinch of saffron
- 1/2 teaspoon of paprika
- 400g dried orzo
- 650ml vegetable stock
- 8 vegan chorizo sausages
- 100g fresh or frozen peas
- Juice from 1/2 lemon
- Fresh parsley to garnish
