Ingredients

• 1 tablespoon (15 ml) cornstarch
• 1 can 370 ml evaporated milk
• 1 onion, finely chopped
• 1 clove garlic, finely chopped
• 1 jalapeño pepper, seeded or not, finely chopped
• 2 tablespoons (30 ml) olive oil
• 1 tablespoon (15 ml) tomato paste
• 2 cups (500 ml) yellow sharp cheddar, grated
• Salt and pepper
• 1 lb (450 g) lean ground beef
• 4 hamburger buns
• 8 slices bacon, cooked until crisp
• 1 shallot, finely chopped (optional)
• Store-bought sliced pickles or Quick Pickles
