Claypot Mushroom Chicken Rice - Le-Thermique

Ingredients

• 230 g chicken thighs, cut 3 cm
• 1 tbsp light soy sauce
• 1 tbsp oyster sauce
• 1 ½ tsp dark soy sauce
• ½ tsp sugar
• Pepper to taste
• 3 cloves garlic , peeled
• 20 g ginger, peeled
• 20 g sesame oil
• 5 dried Chinese mushrooms , soaked thinly sliced
• 300 g Basmati rice or white rice , washed
• 400 ml water , included the soaked mushroom water
• 1 spring onions , finely chopped
