African Spiced Portobello Soup

Ingredients

• large Portobello mushrooms, 4 diced
• large onion, 1 chopped
• garlic cloves, 3 minced
• large red bell peppers, 2 diced
• vegetable broth, 4 cups
• diced tomatoes, 2 cups
• ground cumin, 1 teaspoon
• smoked paprika, 1 teaspoon
• Cayenne pepper, a half teaspoon
• Salt, to taste
• black pepper, to taste
• fresh cilantro, handful chopped
• olive oil, 2 tablespoons
• Crumbled feta cheese, for garnish
• Whole grain rolls, for serving
