Baked Mac-n-Cheese

Ingredients

• 2 cups dry elbow macaroni
• 2.5 tsp salt divided
• 4 tbsp butter
• 1 can (12 oz) evaporated milk
• 1/3 cup sour cream
• 2 eggs
• 1-2 tbsp sweetner
• 1/2 tsp black pepper
• 1 tsp paprika
• 1/2 cup whole milk or half-and -half
• 2.5 cups sharp cheddar cheese shreaded
• 2-2.5 cups colby jack cheese shreaded
• 1/2 pound Velveeta Queso dip cubbed
