ORANGE & CRANBERRY CAKE - Sherry's Kitchen Table

Ingredients

• 1 large orange sliced thinly
• 100 g ground almonds
• 100 g of polenta (or self raising flour)
• 1.5 tsp baking powder
• 1 tsp salt
• 200 g granulated sugar
• 200 g softened butter
• 3 eggs
• 1 tsp vanilla essence
• 2 tbsp vanilla or plain yogurt
• zest of 1 large orange
• 1 cup cranberry sauce, leftover or make a compote with 200gms of cranberries and 100 gms of sugar, and cook untill bubbling and thickened.
