Ingredients

  • 4 large leeks , white and light green parts halved lengthwise, washed, and sliced 1/4 inch thick
  • 1 1/2 tablespoons cornstarch
  • 1 1/2 cups whole milk
  • 8 large eggs
  • 1 large egg yolk
  • 1 1/2 cups heavy cream
  • 1 teaspoon table salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon grated nutmeg
  • 1/8 teaspoon cayenne pepper
  • 6 ounces (170 grams) Roquefort cheese or other blue cheese, crumbled (about 1 1/2 cups)
