Stuffed Plantain Canoes - Vidal Speaks

Ingredients

• 6 Ripe PLANTAINS - slightly soft when you push on them
• 6 oz KING OYSTER MUSHROOMS (3 large or any other mushroom)
• 6 Beyond Meat SAUSAGE PATTIES (baked & chopped coarsely)
• 1 cup Dried Black BEANS
• 1 ONION diced
• 3 ½ cups ROASTED RED PEPPER chopped
• ⅓ cup OLIVES (I use manzanita olives)
• CILANTRO for garnish
• A Splash of VEGGIE BROTH to sauté onions & mushrooms
• 1 tbsp SAZON
• 1 tbsp ADOBO
• 1 tsp GARLIC POWDER
• SALT & PEPPER to taste
