One of my favorite spring recipes, rhubarb muffins.

Ingredients

• 3/4 cup brown sugar
• 1/4 cup oil
• 1 egg
• 2 teaspoons vanilla
• 1 cup buttermilk
• 1 1/2 cups rhubarb (finely chopped)
• 1/2 cup nuts
• 2 1/2 cups flour
• 1 teaspoon baking powder
• 1 teaspoon teaspoon baking soda
• 1 teaspoon teaspoon cinnamon
• 1/2 teaspoon salt
• 1/3 cup white sugar
• 1 1/2 teaspoons cinnamon
• 1 tablespoon butter (melted)
