• 3/4 cup (100g) semolina flour
• 1 teaspoon kosher salt, plus more for the pasta water
• 5 large eggs
• 1 cup water, plus more as needed
• 4 tablespoons salted butter
• Freshly ground black pepper, to taste
• 3 tablespoons roughly chopped parsley, optional
