Winter Steak Salad

Ingredients

• ***For the spiced pickled dressing:***
• 1 teaspoon coriander seeds
• 2 bay leaves
• 1/2 banana shallot or 1 regular shallot, thinly sliced
• 1 green chili, small and thinly sliced
• 3 tablespoons malt vinegar
• 3 tablespoons water
• 1 tablespoon sugar
• salt, to taste
• freshly ground black pepper, to taste
• 2 tablespoons extra-virgin olive oil
• ***For steak salad:***
• 2 (8-ounce) rib-eye steaks
• pepper, to taste
• 1 chicory, leaves separated
• 2 handfuls watercress
• mint leaves, to taste
