Spaghetti piccanti alle melanzane | Fattoria La Vialla

Ingredients

• 350 g spaghetti
• 400 g aubergines (if possible the round variety – they are sweeter)
• 80 g smoked pancetta (or bacon)
• 50 g grated pecorino cheese
• 2 ripe tomatoes (or 3 preserved peeled ones)
• 1 average size onion
• 10 tbsp Extra Virgin Olive Oil
• 3 cloves of garlic
• 3 hot chilli pepper
• 2 tbsp balsamic vinegar of Modena I.G.P.
• a few fresh basil leaves
