Ingredients

• 2 fennel bulbs, finely sliced
• 1 clove garlic, crushed
• 1 lemon, juice and finely grated zest
• 1 shallot, finely chopped
• Large handful of fresh parsley, finely chopped
• 1 heaped tablespoon capers, finely chopped
• Salt and freshly ground black pepper
• 3 tablespoons Mellow Yellow Cold Pressed Rapeseed Oil
