Mini Strawberry Tarts with Shortbread Crusts

Ingredients

• 1 1/4 cup all-purpose flour
• 1/3 cup powdered sugar
• 1/4 teaspoon salt
• 1/2 cup chilled butter, cut into 8 pieces
• 1 large egg yolk
• 1 tablespoon heavy cream
• 1/2 teaspoon vanilla extract
• 1/2 cup + 2 tablespoons cold water
• 2 tablespoons cornstarch
• 2 tablespoons powdered strawberry Jello
• 3/4 cup corn syrup
• few drops of red food coloring
• 1/8 teaspoon almond extract (optional)
• 1 pound fresh strawberries
