Old-fashioned devilled turkey meatloaf

Ingredients

• 1 tablespoon olive oil
• 1 onion, finely chopped
• 1 baby fennel, finely chopped
• 1 carrot, finely diced
• 3 garlic cloves, crushed
• 500 gram turkey mince
• 1 cup cooked green lentils
• 1/2 cup quick cooking oats
• 1/4 cup tomato sauce
• 1 tablespoon Worcestershire sauce
• 1 egg, lightly beaten
• 1 tablespoon chopped parsley
• 1 tablespoon mustard powder
• roasted vegetables, micro watercress to serve
• Glaze
• 1/2 cup tomato sauce
• 1/3 cup maple syrup
• 1/4 cup balsamic vinegar
