Banana Stuffed Rum Runner

Ingredients

• 1 roasting chicken, about 5 pounds
• Salt and freshly ground pepper
• 3 Tablespoons Butter
• 2 garlic cloves, finely chopped
• 1 cup seasoned bread crumbs
• 1/4 cup fresh lime juice
• 1 Tablespoon grated lime peel (green part only)
• 1 Tablespoon rum
• 1 tsp brown sugar
• 1/4 tsp ground nutmeg
• 1/4 tsp cayenne pepper
• 4 firm ripe bananas, peeled and chopped
• 4 Tablespoons butter
• 3 Tablespoons rum
