Five Spice Charred Piña Colada | Club House

Ingredients

• 1/2 cup (125 ml) water
• 1/2 cup (125 ml) sugar
• 2 tbsps (30 ml) dark rum
• 2 1/2 tsps (12 ml) chinese five spice
• 1/2 tsp (2 ml) Szechuan pepper finely ground
• 1/2 tsp (2 ml) chili pepper chipotle
• 1 tsp (5 ml) pure vanilla extract
• 3 canned pineapple rings 1/2 cup (125 ml) juice from can reserved
• 1 1/2 cups (375 ml) ice
• 3/4 cup (175 ml) cold heavy cream
• 1/3 cup (70 ml) icing sugar
• 1/4 cup (60 ml) Coconut Cream well stirred
• 1 tsp (5 ml) fresh lemon juice
