Last-Minute Spinach and Cheese Lasagna | Oregonian Recipes

Ingredients

• 3 tablespoons butter
• 3 tablespoons all-purpose flour
• 1/4 teaspoon kosher salt
• 1/4 teaspoon freshly ground black pepper
• 3 cups milk
• 1/8 teaspoon ground nutmeg
• 3/4 cup shredded pecorino Romano or parmesan cheese (divided)
• 2 16- to 18-ounce bags frozen large ravioli (we used Safeway's five-cheese variety)
• 1 10-ounce package frozen chopped spinach, thawed and squeezed to remove excess water
• 1 cup part-skim ricotta cheese
• 1 8-ounce bag shredded mozzarella cheese
