Meatloaf with Bacon Glaze - Cobra Chilli

Ingredients

• 500g beef mince
• 250g pork mince (optional – adds juiciness)
• 1 medium onion, finely diced
• 2 carrots, grated
• 1 cup baby spinach, chopped
• 2 slices day-old bread, torn into small pieces (or ½ cup breadcrumbs)
• ½ cup milk (to soak the bread)
• 2 cloves garlic, minced
• 1 egg, lightly beaten
• 1 tsp Worcestershire sauce
• 1 tsp Dijon mustard
• 1 tsp dried thyme (or Italian herbs)
• Salt & black pepper, to taste
• 8–10 rashers streaky bacon
