- 2 tsp olive oil
- Salt and pepper, to taste
- 8 cups romaine lettuce, chopped
- 2 cups green or red cabbage, sliced
- 1 red bell pepper, thinly sliced
- 4 green onions, sliced
- 1/2 cup salted creamy peanut butter (or almond butter or sunflower butter)
- 2 Tbsp low-sodium soy sauce or tamari (or coconut aminos)
- 1 Tbsp maple syrup (or other sweetener of choice)
- 1 tsp sriracha (can substitute ¼ tsp red pepper flake) (decrease or omit depending on spice preference)
- 2 Tbsp lime juice
- 1/2 cup hot water
