St. Patrick’s Day Guacamole - California Avocados

Ingredients

• 3 California Avocados
• Juice from 1/2 lemon
• 1/2 cup carrots, very finely diced
• 1/4 cup red onion very finely diced
• 1/4 jalapeño seeded and very finely diced (optional)
• 1 clove of garlic, crushed
• 3 slices cooked bacon chopped
• 1/4 cup very finely chopped parsley
• 2 oz. Irish cheddar, crumbled
• heavy pinch of salt
• heavy pinch of fresh ground black pepper
