• 680 g bone-in skin-on chicken pieces, patted dry, mix of breast and thigh
• 0.25 tsp fine salt
• 0.25 tsp black pepper
• 15 ml vegetable oil
• 1 whole onion, finely diced
• 1 whole carrot, peeled and cut into roughly 1cm pieces
• 1 rib celery, cut into roughly 1cm pieces
• 1 whole bay leaf
• 2 sprigs fresh thyme
• 1900 ml good quality chicken broth
• 140 g spaghetti, broken into roughly 2.5cm (1 inch) pieces
• fresh parsley, chopped
• fresh dill, chopped
