Ingredients

• 4 cod steaks of around 150 g (5.3 oz) each
• 1 bag of potato flakes (around 125 g or 4.4 oz)
• 4 egg whites
• 1 L (4 and 1/4 cups) peanut oil
• Salt, pepper
• 100 g (3.5 oz) baby spinach leaves
• 2 lemons
• 2 hard-boiled eggs
• 1 lemon (juiced)
• 1 tbsp Dijon mustard
• 25 cl (1 cup) olive oil
• 2 tsp gherkins in vinegar (chopped)
• 1 spring onion (chopped)
• ¼ bunch of flat-leaf parsley (chopped)
