Ingredients

• 1 large onion, halved and thinly sliced
• 4 tbs. olive oil, divided
• 1 tsp. coarse salt
• 4 large Idaho baking potatoes, peeled
• 1/4 tsp. fresh ground black pepper
• 4 strips Applewood smoked bacon, chopped and cooked crisp
• 1 tsp. fresh thyme, chopped
• 2 eggs beaten with 1/2 c half and half
• 3 tbs. unsalted butter, cubed small
