• 2-1/2 lbs Monarch's Choice Wildflower Honey
• 4 oz Dutch Gold Buckwheat Honey
• 1/4 cup Sugar
• Juice of 1/4 Lemon (or 1-1/2 tsps Lemon Juice)
• Juice of 1 Orange (or 2 oz Orange Juice)
• 1/4 tsp Pectic Enzyme
• 1/2 tsp Yeast Nutrient
• 1/4 pkg Nottingham Ale Yeast or Safale S-04 Ale Yeast
• Filtered, Spring, or Rain Water (to make up 1 gallon)
