Ingredients

• 6–8 bone-in chicken thighs with skin on
• 2 Tbsp. butter
• 1/2 cup diced shallots
• 4 garlic cloves, thinly sliced
• 2 Tbsp. flour
• 1 cup of equal part of milk and cream (not free)
• 2 sprigs fresh rosemary
• 2 bay leaves, fresh or dried
• salt and fresh black pepper
• 1/3 of cup honey
• 3 tbsp dijon mustard
• 2 tbsp fresh lemon juice
