Ingredients

• 450g carrots chopped
• one large onion chopped
• two cloves of garlic
• 1.2 litres of vegetable stock
• 1tbsp ground coriander
• 1tsp fresh chopped coriander leaves
• salt and pepper to taste
• olive oil
• 1 tbsp butter
