• 1 Pound Peaches, skin on, pitted and sliced ⅓-½ inch thick (about 2 large or 3 small peaches)
• 15g brown sugar (dark or light)
• 25g granulated sugar
• Pinch of salt
• ½ tsp ground cinnamon
• ¼ tsp ground or freshly grated nutmeg
• Zest of ½ lemon
• 45g New Deal Distiller’s Workshop Brandy
• 113g (1 stick) unsalted butter, browned
• 125g all-purpose flour
• 1 ½ tsp baking powder
• ½ tsp salt
• 245g (1 cup) whole milk
• 1 ½ tsp vanilla extract
• 175g sugar
