This cake is the epitome of summer! It is very simple to assemble, and the end result has a nice balance of sweet and tartness.

- 150 g polenta
- 1 1/2 oranges, juice and zest
- 400 g rhubarb, cut into 6cm lengths
- 1 tbsp shelled pistachios, finely chopped
