  • 3/4 cup (165g) firmly packed light brown sugar
  • 3 centimetre (1¼-inch) piece fresh ginger (15g), grated
  • 4 cardamom pods, bruised
  • 2 whole star anise
  • 1/2 cup (125ml) maple syrup
  • 1/4 cup (60ml) cognac or sherry
