Ingredients

• 1/3 cup Fustini's Persian Lime olive oil, plus more for pan
• 1 1/2 cups finely ground graham cracker crumbs (from about 12 crackers)
• 1/4 cup granulated sugar
• 1/4 teaspoon Kosher salt
• 3/4 cup toasted sweetened shredded coconut, garnish
• 2 (8-oz.) blocks of cream cheese, room temperature
• 1/3 cup granulated sugar
• 3 large eggs
• 1/2 cup coconut cream (from a 14-oz. can mix well)
• 1 tablespoon Fustini's Coconut balsamic
• Kosher salt
