Ingredients

• 5 g Yeast fresh
• 1 tbsp Sugar
• 250 g Flour strong
• 1 tbsp Dijon Mustard
• 50 ml Red Wine Vinegar
• 200 g Taleggio sliced; total for two pizzas
• 2 piece Egg free-range
• 1 piece Lemon zest only
• 5 g Salt
• 1 pinch Pepper freshly ground
• 1 drizzle Olive Oil
• 1 drizzle Garlic And Chilli Oil optional
• 5 tbsp Extra Virgin Olive Oil
• 1 piece Anchovies to taste
• 500 g Spinach cooked and squeezed dry; quantity for two pizzas
• 2 heads Chicory
