Ingredients

• 1 lb chicken (bone in chicken thighs, breasts, or strips)
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1 tablespoon olive oil
• 2 medium green peppers, sliced
• 1 medium red onion, sliced
• 1 small jalapeno pepper seeds removed for less heat
• 1 tablespoon oregano
• 1 cup basmati rice
• 1 15-ounce can black beans, drained and rinsed
• 2 cups frozen corn thawed and drained
• 3 cups water
• 1/2 cup cilantro, chopped
• 1/2 cup Monterey Jack cheese, shredded
• 1 medium lime, cut into wedges
